OVERVIEW

Nestled under a mezzanine within a double-height industrial unit is 100 Mile Table’s commercial kitchen, retail servery and informal shared dining space. While the wall of exposed timber stud framing surrounding the kitchen is a direct response to Food Premises Standards discouraging cavity wall construction around commercial kitchens, it also references traditional local sub-tropical construction techniques. Sections of the wall peel back to reveal a service bench, display of fresh food and barista, with the backs of doors used as menu boards. Instead of using low-quality pine framing, locally-sourced blackbutt hardwood was chosen, not only for longevity, but also to represent the same commitment to quality and localism at the heart of the 100 Mile Table’s ethos.
